Chef Allan Williams, left, unloads a mold of cooled maple candy as Chef Blair Zinck, right, fills more molds with the liquid maple candy in the kitchen of the Intercontinental Chicago Hotel as they start preparations for the Taste of Atlantic Canada reception, taking place Oct. 3 in Chicago. Both are Chef Instructors at the Culinary Institute of Canada located in Charlottetown. The maple candy will be just one of the many delicacies from the Atlantic region that will be offered to guests attending the reception, which is part of the Team Canada Atlantic Tier 2 Trade Mission to Chicago. The mission includes 30 Atlantic Canadian companies seeking to do business with companies in the Greater Chicago area. The delegation is in Chicago until Oct. 6.
